Most soy sauce is produced at industrial scale using ingredients from multiple countries.Eighteen Moons is brewed differently.Our soy sauce is made in Melbourne using Australian wheat and soybeans and fermented slowly for eighteen lunar cycles before bottling.Each batch is small. Some seasons produce none.Fermentation: 18–30 months

Eighteen Moons is brewed in extremely small quantities and prioritised for restaurant allocation.Use as a finishing soy for sushi and sashimi, or blend into tare.
